Creating a new flash CFI protocol?

The XML file contains flash memory definitions as shown below. How do I create a "new" protocol with a new number so that I can read/write a Cypress S29WS128P device? Is there an existing protocol file I could use to start with that has the CFI protocol already?

How the chip is connected? Are you using JTAG to read the flash?

I am using USB BDM NT connected to a parallel bus with a Motorola 68000
